Basic sweet tuille

Ingredients

  • 60 g egg white
  • 40 g neutral oil I use sunflower oil
  • 10 g butter
  • 50 g flour
  • 50 g sugar

Instructions

  • Mix the egg white with the oil, the butter, the flour and the sugar. Blend this till you have a smooth batter.
  • You can add a knife tip of coloring powder to create a nice color.
  • Then spread it on a tuille mold and level the top with a pallet knife.
  • Now bake them at 150 °C for around 15 minutes till golden brown. Keep them dry and covered for later. 
  • If you want to spread it on a silicon sheet using a stencil use 50 grams of flour. If you want to pipe the batter use 60 grams of flour instead of 50 grams.
