Two flavored pate de fruit

We’re making pate de fruit, a delicious soft candy that is packed with flavor! It’s really a treat to make and eat. We’re making a two layered one and the flavors are pomegranate and vanilla.

The pomegranate pate de fruit

Servings 30 pate de fruits

Ingredients

  • 250 g pomegranate juice
  • 25 g sugar
  • 7 g pectine Jaune
  • 155 g sugar
  • 50 g glucose syrup
  • 5 g vinegar

Instructions

  • First pour the pomegranate juice into a saucepan. Then transfer the 25 grams of sugar into a bowl together with the pectine powder. Mix this well.
  • Now bring the juice to a boil on a medium heat. Once it’s boiling add the pectine sugar and while stirring bowl it for 1 minute.
  • Continue heating it and slowly add the 155 grams of sugar and the glucose syrup. Heat this up till it’s 108 °C.
  • After that add the vinegar and bring this to a boil once more.
  • Then pour it on a silicon sheet and spread it with a pallet knife. Let it set for at least 1 hour.

The vanilla pate de fruit

Servings 30 pate de fruits

Ingredients

  • 250 g coconut milk
  • 25 g sugar
  • 7 g pectine Jaune
  • 155 g sugar
  • 50 g glucose syrup
  • 5 g vinegar
  • 1 vanilla pod

Instructions

  • Pour the coconut milk into a bowl. Then cut the vanilla pod in half and scrap out the seeds. Add it to the coconut milk. Now bring this to a boil on a medium heat.
  • Meanwhile transfer the 25 grams of sugar into a bowl together with the pectine powder. Mix this well.
  • Now bring the juice to a boil on a medium heat. Once it’s boiling add the pectine sugar and while stirring bowl it for 1 minute.
  • Continue heating it and slowly add 155 grams of sugar and the glucose syrup. Heat this up till it’s 108 °C.
  • After that add the vinegar and bring this to a boil once more.
  • Then pour it on a silicon sheet and spread it with a pallet knife. Let it set for at least 1 hour.
  • Now place the vanilla pate de fruit on top and gently remove the silicon sheet. Then roll this into a beautiful spiral.
  • Trim the side and finish rolling the spiral. Then spread some sugar on a tray and use it to cover your pate de fruit roll.
  • Portion it into the desired thickness and place the pate de fruit with the less beautiful side down on the sugar.
  • Keep the pate de fruit dry and covered and you can keep it for many weeks.
